Hello ladies and gents this is the viking telling you that today we are talking about

LENTIL AND CHORIZO STEW

Lentil and Chorizo Stew Recipe

Ingredients

  •  1 3/4 cups Pardinas lentils
  •  9 oz chorizo, sliced
  •  4 cloves garlic
  •  2 carrots, peeled and diced
  •  1 large potato, peeled and diced
  •  1 medium onion, diced
  •  Extra virgin olive oil
  •  1 tbsp Spanish smoked paprika
  •  Spanish sea salt


Preparation
STEP 1
Rinse lentils. Place lentils, chorizo, whole garlic cloves, carrots & potatoes in a large pot. Fill pot with water until ingredients are submerged by two inches.

STEP 2
Bring to a boil, then lower to a simmer. Let cook uncovered, stirring occasionally.

STEP 3
Sauté onions in a pan with olive oil until slightly browned, then add paprika. Add onions to the pot of lentils. Cook for 45 minutes.

STEP 4
Remove the cloves of garlic, squeeze garlic from its skin and mash. Return to the pot. Salt to taste.
