FISH TIME

Hello ladies and gents this is the viking telling you that today we are talking about

Burgers

  • 4 fillets Fresh fish
  • 1 tsp Salt
  • ½ cup Flour
  • 2 Eggs, whisked
  • 2 cups Panko breadcrumbs
  • 4 Burger buns
  • 2 Tbsp Vegetable oil
  • 2 Tbsp Butter
  • 4 Lettuce leaves, washed
  • 2 Heirloom vine tomatoes, sliced
  • 1 Avocado, sliced
  • 1 serving Tartare sauce, recipe below


Tartare sauce

  • ½ cup Mayonnaise
  • 1 Tbsp Capers, chopped
  • 2 Tbsp Gerkin, or cornichons, chopped
  • 1 Tbsp White wine vinegar
  • 1 Tbsp Chopped chives, or chopped parsley 


Directions

  1. Season fish with salt, coat in flour, dip into egg then press into breadcrumbs.
  2. Slice buns in half and toast under a hot grill.
  3. Heat vegetable oil in a large frying pan until hot. Add butter and as soon as it foams add fish and cook until golden on both sides.
  4. Build burgers with lettuce, tomato, fish, avocado and tartare sauce, recipe below.

For the tartare sauce
Mix all ingredients together, season with fine salt and freshly ground pepper. Keep in the fridge until needed.
