Orange ricotta-stuffed figs 

Orange ricotta-stuffed figs recipe

INGREDIENTS
  • 160g (2/3 cup) firm ricotta
  • 2 teaspoons honey, plus extra, to drizzle
  • 2 teaspoons finely grated orange rind
  • 6 fresh figs, halved lengthways
  • Fresh thyme sprigs, to serve
  • Pistachio kernels, finely chopped, to serve

METHOD
Step 1
Combine the ricotta, honey and orange rind in a small bowl. Place a heaped teaspoonful of the mixture on top of each fig half. Divide among serving plates.
Make your own creamy ricotta cheese at home in just a few steps using cream, salt and lemon juice.
Step 2
Drizzle over extra honey and sprinkle with thyme and pistachio.
